Hot Zucchini Soup with Fresh Herbs

1/2 cup oil
2 cloves garlic, green germ removed if desired, coarsely chopped 4 pounds fresh garden zucchini trimmed and cut into 1/2-inch cubes
1 small dried hot pepper, such as bird's-eye pepper, crushed
1 cup flat leaf parsley leaves. 2 1/2 cups fresh basil leaves, fine salt.

1.  Place the oil and garlic in a medium-high heat. Stir and add the zucchini. Cook, stirring constantly,until garlic and zucchini turn golden. Add the hot hot pepper and reduce the heat to medium. 2. Coarsely chop the parsley and 2 cups of basil and add the zucchini mixture.
