Orange Honey Gingerbread:
1 & 1/2 cups flour
1 teaspoon baking
soda
1/4 teaspoon salt
1 teaspoon ginger
1/4 teaspoon nutmeg
1 large
egg
2 tablespoons vegetable oil
1/2 cup orange juice
1/2 cup
honey

Sift the flour with the baking soda, salt and spices. In another
bowl beat the egg with the oil, juice and honey. Add the flour to the wet blend
and stir by hand until just mixed. Bake in a greased 8x8-inch pan at 350 F.
until a knife inserted in the center comes out clean (about 25 minutes). Serve
with a dollop of sour cream or yogurt
