Potato & Snow Pea Salad:
1 & 1/2 lbs. new potatoes, scrubbed and
quartered
8 oz. snow peas, trimmed
1/3 cup minced red onion
1/2
teaspoon minced garlic
1/2 cup sour cream
3 tablespoons Dijon mustard
2
tablespoons chopped fresh chives
Salt to taste

Boil the potatoes
until tender; drain, transfer to a salad bowl, and set aside to cool. Steam the
snow peas until crisp-tender, then rinse with cold water, drain, and add them to
the cooled potatoes. Blend together all the rest of the ingredients and pour
over the vegetables. Gently toss to coat, then cover the bowl and refrigerate
for 1-2 hours before serving.
