Cranberry Bread:
1 & 2/3 cups flour
3/4 cup sugar
1 & 1/2
teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 eggs,
lightly beaten
1/2 cup cranberry juice
1/3 cup vegetable oil
1/2
teaspoon vanilla
1 cup chopped cranberries

Combine the first 5
ingredients and make a well in the center. In a separate bowl, mix together the
remaining ingredients; pour into the well and fold the wet blend into the dry
just until the flour is moist (don’t over stir). Bake in a greased loaf pan at
350 F. until done (about 50 minutes). Cool before removing from pan.
